The pairing of food and wine takes centre stage at The Palazzo at Montecasino for one elegant, exclusive event each month as a selection of fine wines from a leading wine estate are paired with a multi-course menu, presented by Tsogo Sun’s group sommelier, Miguel Chan, and The Palazzo’s executive chef, Gareth Jordaan.

On Thursday 30 May, the Palazzo Wine Evening Dinner will feature Warwick Wine Estate, which is based in Stellenbosch on the slopes of Simonsberg.  The farm is renowned for its range of wines, focusing on premium Bordeaux varieties.  A variety of their wines will be paired with a five course dinner, and Cellarmaster JD Pretorius will join Miguel Chan in the presentation.  The dinner will end with three exclusive Grand Cru coffees – Lungo from Guatemala, Espresso from Brazil and Ristretto from India.

Award-winning Miguel Chan celebrates 10 years with Tsogo Sun in July this year, where he has ensured the exceptionally high wine standards for Tsogo Sun hotels, working with food & beverage teams to create a unique and appealing dining experience, and developing a team of wine stewards to become future sommeliers.

In a collaborative creation by two Tsogo Sun executive chefs – Matthew Foxon of 54 on Bath’s Level Four and Gareth Jordaan of The Palazzo Montecasino’s Medeo – along with The Palazzo’s Pastry Chef Marco Gaspar, the exquisite and earthy flavours of truffles will be paired with the perfect wines at two delightful truffle and wine pairing dinners.

The two six-course dinners are on Thursday 25 July at Level Four, 54 on Bath, featuring wines from Morgenster Estate, and on Monday 5 August at the exquisite Rosa venue at The Palazzo Montecasino. The cost at both dinners is R650 per person.

According to Plated.com, truffles are the “epitome of gastronomy” and often regarded as a “diamond in the kitchen” with fresh truffles reserved for the special culinary occasions. Truffles are precarious to grow and difficult to harvest. They’re coveted for their rarity, and have been described as “sublime and mysterious:, with a unique taste, reminiscent of earthy mushrooms and with more depth and complexity.

Foxon says, “Truffles are a rare and flavourful delicacy– and creating an entire truffle and wine pairing menu is a culinary privilege. We believe the two dinners will provide an exclusive and unique experience for the guests.” The truffles are cultivated in South Africa, through Woodford Truffles SA, a farming partnership company.

The Level Four Woodford truffle wine evening begins with Morgenster Cuvee ’10 and truffle canapés and an amuse bouche. The starter is Porcini arancini, Boland and goat’s cheese and truffle, with Nabucco ’12, followed by slow braised beef tortellini, and Estate Reserve ’10, and the palate course of Dirty Martini, Vermentino ’19, olive, and truffle.

The main course is Guinea fowl, spinach puree, baby carrots, boulangère potato, and truffle jus, served with Lourens River Valley ’07. Dessert is ‘Hard to Soft’ local cheeses and truffle honey, with Tosca ’11 and a selection of truffle-infused petit fours.

The menu for the dinner at The Palazzo’s Rosa venue includes an arrival canapé of duck prosciutto, liver paté and truffle butter, followed by a starter of coriander scallop, pancetta, clam chowder and truffle, served with Kleine Zalze Brut. The intermediate course, which is presented by Chef Matthew Foxon, is pumpkin ricotta tortellini, burnt sage butter, truffle and parmesan foam. A palate cleanser follows, consisting of buttered popcorn sorbet, Maldon salt and truffle. The main course is one for the carnivores, serving kudu with bitter chocolate and truffle jus, purple potato, beets and parsnip purée, accompanied by Reyneke Cornerstone. The cheese course is yet another delight of truffle appreciation – roast fig, gorgonzola and truffle honey accompanied by Bosman Pinot Noir. And finally, an unforgettable dessert consisting of Arriba milk chocolate panna cotta, roast hazelnut, truffle shavings and cherry, paired with Rustenburg Straw Wine.

Easter Sunday lunch is traditionally a day to enjoy with family, usually involving varying degrees of feasting. In keeping with this tradition, the Palazzo’s newly refurbished Medeo restaurant in Montecasino has created an amazing buffet menu (https://www.tsogosun.com/the-palazzo-hotel/offers/easter-sunday-buffet-lunch) designed for a memorable Easter celebration.

Medeo (https://www.tsogosun.com/medeo) relaunched in March 2019 with a chic new look and feel reflecting both Italianesque and South African style and featuring bold colour and added comfort, created and coordinated by David Muirhead & Associates Interior Architectural Design. The changes included classical and comfortable seating that ensures people can linger over their meals, vibrance with colours and textures, and as a main focus, magnificent large artworks of birds in flight by Kirsty May Hall on the walls.

The Medeo Easter Sunday Lunch buffet menu includes a special kids’ buffet featuring their favourite foods and desserts, and for the grown-ups, an antipasti selection to start with marinated produce in herbs and olive oil; oysters with bloody Mary jelly and lemon pearls; shrimp cognac salad and various other salads; charcuterie; vegetarian options; tapenade; assorted smoked fish platter; shell fish salad, and more, and a soup station.

The hot carvery features perfectly roasted beef, apricot glazed pork loin, roast chicken roll, deboned lamb shoulder, and sauces and jellies as accompaniment. The hot selection includes potato au gratin, basmati, grilled truffle polenta, roast vegetables, Moroccan style lamb tagine with chickpeas and toasted almonds, spinach and feta lasagne, grilled kingklip, calamari and prawns.

Desserts are not to be missed and include chocolate Easter candy cake, carrot cake roulade, rocky road brownie, panettone, macarons, tartlets, chocolate and orange crème brulee, dark chocolate passion fruit mousse, other assorted mini desserts, and hot cross bread pudding with vanilla sauce. For the finishing touch to the meal is an excellent cheese display with preserves, roasted nuts and crackers.

Medeo restaurant at the palatial Palazzo Montecasino hotel has been refreshed with a chic new look and feel that reflects both Italianesque and South African style, and features bold colour and added comfort, as well as a new menu infused with delicious Mediterranean flavours.

The elegant restaurant has been refurbished to ensure it continues to deliver the refined dining experience it is renowned for. David Muirhead from David Muirhead & Associates Interior Architectural Design, who were commissioned to coordinate the new design, has ensured that the ‘palatial’ and Italian integrity of the Palazzo has been retained in the restaurant, while introducing new design elements. “We aimed for an outcome that would be both chic and comfortable. We used a selection of rich fabrics that feature golden velvets, as well as South Africa’s celebrated and iconic Ardmore designs. Classical and comfortable seating ensures that people can linger and relax over their meals. We introduced vibrance into the restaurant with colours and textures, and as a main focus, magnificent large canvases featuring new artwork of birds in flight by Kirsty May Hall on the walls, which echo the beauty of the surrounding gardens and birdlife.”

The new Medeo menu offers a world-class selection of fine dining à la carte options that include the signature dishes such as starters of Mediterranean burrata – triple cream mozzarella, fresh ciabatta, heirloom tomato, basil and olive oil; and Octopus carpaccio with potato salad, lemon aïoli, potato fries, smoked tomato and dill vinaigrette; fresh homemade pasta – Veal tortellini with sage and butter sauce, veal jus, Grana Padano, and pickled shimeji; main courses of Sous vide chicken with spinach and goat’s cheese roulade, bell pepper sauce, baby potato and charred onion, as well as other lamb, pork, veal, fish, and steak options. The signature dessert is Apple strawberry crumble with caramel vanilla sauce and cinnamon ice cream.

Tsogo Sun’s opulent and stylish Palazzo hotel at Montecasino, already the recipient of a range of industry and consumer awards, has been presented with four major awards, both global and local, in recent months – by the Lilizela, Business Traveler Africa, World Travel, and World Luxury Hotel bodies.

At the South African Lilizela Tourism Awards on 29 October, the Palazzo was presented with the Regional Service Excellence – Accommodation Award in the Hotel sub-category. Lilizela says the Accommodation Awards are designed to encourage and motivate hotels to offer the best possible service, facilities, and product, and to celebrate excellence, creativity, and innovation.

It was also voted Best for the Business Traveller in this year’s Business Traveler Africa Awards by a board of experienced travel professionals who were involved in selecting the winners.

On the global scene, the Palazzo won ‘Africa’s Leading Casino Resort’ in the World Travel Awards, which acknowledge, reward and celebrate excellence across all sectors of the global travel and tourism industry.

The 2017 World Luxury Hotel Awards – which will only be officially announced on 2 December in Switzerland – has sent a preliminary notification that the Palazzo is a winner. The category details will be revealed on 2 December.

The World Luxury Hotel Awards are accepted as the pinnacle of achievement for luxury hotels and spas worldwide. They were established in 2007 as a celebration of ultimate achievement in service excellence, recognising and rewarding hotels that have excelled beyond the normal standards of quality and service. The winners are selected from votes cast by guests, tour operators and independent travel consultants globally. For the winners, these awards signify excellence, while for travellers they provide assurance of top class quality and exceptional experiences.

Rosa is the new intimate function venue in the Palazzo at Montecasino, forming part of the recently completed R60 million refurbishment of the hotel.

The interior of the restaurant is airy and Italian, yet with a slightly Provençal feel. The design integrates with the garden, while the exposed ceilings feature beautiful timber beams from which chandeliers and fans are suspended, co-ordinating with the timber frame glass doors and timber floors. “The restaurant features a deep, rich wallpaper with a striking red flower running through it. The red is extended through to the new show kitchen and onto the linen on the tables. The chairs are a combination of some formal, deep button-back upholstered dining chairs and some casual black-and-white outdoor wicker café style chairs.

The palatial Palazzo hotel at Montecasino in the heart of Fourways in Sandton recently celebrated its 14th anniversary with a comprehensive refurbishment that included the transformation of all rooms as well as the addition of a beautiful new restaurant and function venue.

“We pride ourselves on our reputation for providing ‘the velvet touch’ to guests, and this revamp has ensured that we maintain the high standard of refined elegance and opulence that have been the hallmarks of this property – which we believe is the most beautiful hotel in Johannesburg – since we opened in November 2000,” comments Robert Jasper, General Manager of the Palazzo, Montecasino.

The refurbishment formed part of Tsogo Sun’s organic growth strategy and represented an investment of R60 million by the group. “The Palazzo is a magnificent hotel with classic architecture and iconic public spaces, particularly the beautiful gardens. We particularly focused on the rooms in this refurbishment to ensure they offer a luxury experience to match the overall setting. This is the most beautiful hotel in Johannesburg,” says Marcel von Aulock, CEO of Tsogo Sun.

The Palazzo, Montecasino offers world-class facilities for leisure and business travellers, including a variety of tastefully decorated rooms that vary from the lavish 600m2 Penthouse to the luxurious Presidential, deluxe, superior and standard rooms, catering for all tastes and travel requirements.

Interior designers David Muirhead and Associates handled the makeover of the rooms, giving them a contemporary colour palette in elegant fabrics and wall finishes.

The development team created a design that retains the hotel’s distinctly Tuscan feel and its stylish look. Lo-Ann Abernethy, Interior Designer at David Muirhead, was responsible for the execution of the designs: “We were inspired by the exquisite gardens and the buildings of the property – and they formed the starting point. We brought through that same essence into the interiors; the same authenticity that makes it true to the Italian spirit, while being innately elegant and luxurious.”

Much of the existing furniture was retained and either modified, reupholstered or recoloured. An element of ultra-modern technology was added in the form of new 40-inch LED TVs on beautiful new TV stands.

The refurbishment of the rooms was completed one wing of 25 rooms at a time, in a systematic approach that took a year – and feedback from guests has been overwhelmingly positive.

“In addition to the room refurbishment, and in response to our guests’ valued feedback, we also built a function venue in the garden alongside the colonnade leading through to the Montecasino complex – called Rosa – enabling us to meet the demand for overflow breakfast and function space,” says Jasper.

The design of Rosa is in keeping with the Tuscan theme of the hotel and is located adjacent to the walkway that leads guests out of the hotel into the Montecasino complex. The back wall of the restaurant is an existing stone boundary wall clad in ivy, lending a garden feel to the restaurant, and tables and chairs in the walkway add to the venue’s typical European café style.

The Palazzo is ideally located in the upmarket suburb of Fourways, Johannesburg, a mere 15 minutes from Sandton, South Africa’s business hub, 40 minutes from OR Tambo International Airport and 20 minutes from Lanseria International Airport. Affectionately known as Chef Gerard, Gerard Vingerling is handing the reigns of 54 on Bath’s culinary excellence over to Phil de Villiers, whilst he is preparing to step into the Executive Chef position at Tsogo Sun’s flagship Palazzo Hotel in the Montecasino Entertainment Complex, Fourways.

The move from 54 on Bath to the Palazzo hotel will almost be similar to a ‘homecoming’ for Gerard since he was the Executive Chef at the Southern Sun Montecasino during the launch of this hotel. When Tsogo Sun launched their new boutique offering, 54 on Bath in 2012, Gerard, with his unmatched experience managed this new offering, laying the foundation of culinary excellence and imparting his substantial knowledge to his team.

Gerard started his love affair with food when he landed his first job as a as a pizza chef when he left school, some 20 years ago. He loved the organized chaos and has since gone from strength to strength. His professional biography includes the ownership of a top-five gourmet restaurant, stints at several five-star hotels, and an outstanding reputation for exceeding the expectations of even the most discerning and demanding celebrity guests.

Gerard delights in blending classical cuisine with bold contemporary innovations – resulting in an intelligently conceived signature style that mesmerizes his many patrons. His favourite utensil in the kitchen is his Chef’s knives, and one wonders at the interesting stories these knives would tell if only they could talk!

The spectacular Palazzo, Montecasino celebrates its 14th year of glamour, with an extensive refurbishment project that is sure to provide guests with even more reason to stay at this opulent Tsogo Sun Johannesburg hotel and casino. Over the course of a year, renovations totalling a notable R60 million along with a new dining establishment have taken the city’s cherished hotel to a new era of style. Rosa, the new restaurant has been aptly named due to its location overlooking the rose gardens and it is set to enhance the hotel’s food and beverage offering by providing an elegant venue for breakfast and afternoon teas. It will also cater for small events, special occasions and intimate functions. 

The refurbishment of the Palazzo has seen the transformation of 202 rooms .. According to Development Manager Beverley Wallace, who oversaw the refurbishment project along with Development Specialist Robyn Campbell and with Lo-Ann Abernethy and David Muirhead of David Muirhead & Associates, “The brief was clear: we needed to keep the essence of the design intent that was created back in 2000. A few trials in mock-up rooms and we quickly realised that a contemporary look wasn’t going to work, so we went back to the drawing board to create a design that would have a distinctly Tuscan feel, retaining the Palazzo’s stylish, authentic look.”

“The theming is part of the DNA of the hotel; it’s what gives it character and ensures the timelessness of the property. David and Lo-Ann interpreted and executed the brief perfectly, with a design, textures, fabrics and colours that complement what we envisaged,” she added.
